Gorgeous photos and poetry! I am definitely going to have to try this salad. Also, I just bought wheat berries on a whim (at least, I hope they’re wheat berries. They don’t appear to use that term over here, so I picked up whole ‘wheat grain’ instead. Do you think it’s the same?) and now I’m going to cruise your site for some yummy ideas! * can’t wait *
Thanks Rona. I think you’ll find this salad to be a keeper. By the way, I’m noshing on some wheat berries in warmed almond milk with sliced bananas and a drizzle of honey this morning. Your “whole wheat grain” is the equivalent nomenclature. Just remember to simmer them for about an hour and make sure they’re covered with water. They kind of pop open a bit once cooked through. Try swapping them in for other whole grains in recipes or as the base to a morning breakfast porridge. Enjoy and let me know what you think of them.

Your fennel and beet combos have been rocking the Bauvier and Flambeau household all day!
